
It is a
mighty muffin indeed that has my husband
requesting it and
bragging about it! In my pursuit of all things healthy I decided to buy some Millet
. I found this muffin recipe on
Allrecipes.com and gave it a try,
despite the snickers from certain members of my family who doubted that I could make bird food taste good.............. Well no one is laughing now, their faces are too full of muffins.
2-1/4 cups whole wheat flour
1/3 cup millet
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup buttermilk (I use skim milk w/ 1 tsp. vinegar)
1 egg
1/2 cup oil ( I use applesauce)
1/2 cup honey
bake in greased muffin pans at 400 degrees for 15 minutes
don't change the recipe a bit, except soak your flour and millet in the buttermilk (or skim and vinegar) overnight before mixing and baking as usual. Might take a little longer (maybe 30") to bake.
